Raw Zucchini Noodles with Sundried Tomato & Cheesy Chipotle Dressing

Zucchini is an amazing vegetable – rich in copper, manganese and vitamin C – offering a wonderful, crunchy texture when consumed raw. In raw form, it also performs as an excellent substitute for pasta noodles (especially when spiralized – don’t miss our spiralizers in-store!).

INGREDIENTS:

  • 4 zucchinis
  • ½ cup sundried tomatoes
  • 1 Medium carrot
  • ½ cup Green onion

FOR DRESSING:

INGREDIENTS:

  • 1 Cup Walnuts
  • ½ Cup Hemp Seeds
  • 1 Cup Cashews
  • ½ Cup Apple Cider Vinegar
  • 2 Cloves of Garlic
  • 2 Tbsp. Smoke Seasoning
  • ½ Cup Coconut Nectar
  • 1 Tbsp. Smoked Paprika
  • ½ Cup Nutritional Yeast
  • 1 ½ Tsp. Sea Salt
  • ½ Fresh Cilantro
  • 1 Jalapeno
  • 1 ¼ Cups Water

DIRECTIONS:

  1. Combine dressing ingredients in food processor.
  2. Blend until smooth.
  3. Spiralize zucchinis.
  4. Finely slice green onion and sundried tomatoes. Grate carrot.
  5. Pour prepared dressing over zucchini noodles and mix until evenly coated.
  6. Garnish with sundried tomato, green onion, and carrot.
  7. Serve and enjoy!
