Ingredients

Doughnuts

  • 1 Cup All Purpose Organic Wheat Flour
  • 0.5 Cup Organic Coconut Sugar
  • 1.5 tsp Baking Powder (Aluminum Free)
  • 0.25 tsp Sea Salt
  • 0.25 tsp Nutmeg
  • Pinch of Cinnamon
  • 0.5 Cup Almond Milk
  • 0.5 tsp “Filsinger’s” Apple Cider Vinegar
  • 0.5 tsp Vanilla Extract
  • Egg Replacer for One Egg (Follow Box Instructions)
  • 0.25 Cup Earth Balance

Glaze

  • 0.25 Cup “Maison Orphée” Extra Virgin Coconut Oil
  • 0.5 Cup “Canadian Heritage Organics” Maple Syrup
  • 3 tbsp Organic Tapioca Starch
  • 3 tbsp Water

Coconut Bacon

  • 1 Cup Toasted Shaved Coconut
  • 1 tbsp “Maison Orphée” Extra Virgin Coconut Oil
  • 1 tbsp “Canadian Heritage Organics” Maple Syrup
  • 2 tbsp Smoked Paprika
  • Sea Salt to taste

Instructions

Doughnuts

  • Preheat your oven to 350F.
  • In a large mixing bowl, combine your dry ingredients and set aside.
  • Combine wet ingredients in a saucepan over medium-low heat, until Earth Balance melts and stir into dry ingredients.
  • Scoop the dough into a non-stick doughnut pan making 12 even sized doughnuts.
  • Bake for 30 minutes, or until a toothpick comes out clean and allow to cool before decorating.
  • To assemble the doughnuts, dip the top half of each doughnut into the glaze and sprinkle with coconut bacon.
  • Best enjoyed fresh!

Glaze

  • To make the glaze, combine coconut oil and maple syrup in a small sauce pan and bring to a simmer.
  • In a small bowl whisk together tapioca starch and water and slowly add into the simmering pan while whisking.
  • Simmer for 5 minutes on medium heat while whisking periodically, and set aside to cool.

Coconut "Bacon"

  • To make the coconut bacon, toss all of the ingredients together in a bowl, leaving out only the smoked paprika.
  • Bake at 350F for 6 minutes and allow to cool before adding the smoked paprika.
