Featured Recipe: Vegan S’More Pie (GMO-Free, Gluten-Free, Dairy-Free)

This purely decadent throwback to long Summer nights spent by the campfire will satisfy any serious dessert fan. Plus, it’s Vegan and Gluten-Free!

Ingredients

Crust

  • 2 Cups Organic Brown Rice Flour
  • 2 tbsp Organic Flax Meal ( + ¼ Cup Water)
  • 0.5 Cup “Lundberg” Brown Rice Syrup
  • 0.5 Cup "Nutiva" Extra Virgin Coconut Oil
  • Pinch of Sea Salt

Filling

  • 2 Cups “Enjoy Life” Chocolate Chips
  • 0.5 Cup “Natura” Organic Soy Milk (Unsweetened)
  • 0.25 Cup "Nutiva" Extra Virgin Coconut Oil
  • Pinch of Sea Salt

Topping

  • 1.25 Packs “Dandies” Non-GMO Vegan Marshmallows (283g/10oz Package)

Instructions

  • In a large bowl combine all of the “Crust” ingredients by hand and refrigerate for 30 minutes.
  • Press the crust dough into a coconut oil greased pie pan and poke with a fork to prevent from rising.

  • Bake for 20 minutes in a 350F pre-heated oven and prepare the chocolate ganache while baking.
  • Over a double boiler melt your chocolate chips and combine them with the remaining “Filling” ingredients.

  • Once the pie crust is baked, allow it to cool slightly before pouring in the chocolate ganache.

  • Place your marshmallows on top of the chocolate ganache layer and broil for 3-5 minutes or until they turn golden brown.

  • Allow the pie to cool at room temperature before refrigerating for a few hours until the chocolate layer is completely set.
  • Alternatively, if you own a culinary torch, do not broil the pie. Allow it to set completely with the uncooked marshmallows and torch the top just before serving.
