This Asian inspired fusion salad features an array of nutrients for whole body health and wellbeing, ranging from vitamins and minerals to fiber and antioxidants.

Ingredients
Salad:
  • 2 Small Bunches Organic Kale Chopped
  • 1 Large Carrot Julienne or Grated
  • 4 Stalks Organic Green Onions Sliced on the Bias
  • 1 Large Organic Red Pepper Diced
  • 2 Mineola Oranges Segmented
  • ¼ Cup Organic White Sesame Seeds Toasted
Dressing:
  • ½ Cup Organic Peanut Butter
  • ¼ Cup Seasoned Rice Vinegar
  • 2 tbsp “Eden” Mirin
  • Smoked Sea Salt & Black Pepper to Taste
  • 1 tbsp Organic Toasted Sesame Oil
  • 2 Cloves Organic Garlic Minced
  • 2 cm Piece Organic Ginger Minced
Instructions
  1. Mix all of the prepared salad ingredients in a large bowl.
  2. In a high speed blender, combine all of the dressing ingredients, pour over the salad and mix well just prior to serving.
