Dark Chocolate Cherry & Pistachio Bark

Almost any dried fruit works well for this decadent treat.

  •  2 cups dark chocolate chips
  • 1/2 cup shredded coconut
  • 1/2 cup dried tart cherries
  • 1/2 cup pistachio nuts
  • 1/2 cup cashews, chopped
  • 1/2 tsp cinnamon
  • 1/8 tsp cayenne
  • 1/4 tsp ginger powder
  • Sprinkle with sea salt

Line a rimmed baking sheet with wax paper or lightly greased parchment paper.

In metal bowl, over saucepan of simmering water, melt chocolate until very smooth. Stir in half the dried fruit and cashews, plus the spices.

Spread chocolate mixture onto baking sheet. Sprinkle with remaining dried fruit and press gently to adhere.

Chill in refrigerator until firm, about 30 minutes.

Break into pieces of desired size.

 

Dark Chocolate Peppermint Bark

If you’re a fan of minty chocolate, this bark will be your favourite holiday treat!

  •  2 cup dark chocolate chips
  • 1 tsp peppermint oil
  • 2 organic candy canes

Line a rimmed baking sheet with wax paper or lightly greased parchment paper.

In metal bowl, over saucepan of simmering water, melt chocolate until very smooth. Stir in the peppermint oil.

Spread chocolate mixture onto baking sheet. Sprinkle with crushed candy canes.

Chill in refrigerator until firm, about 30 minutes.

Break into pieces of desired size.
